Ingredients:

• 60ml Sabatini 0.0 non-alcoholic distillate
• 30ml freshly squeezed lemon juice
• 20ml simple syrup
• 4 fresh raspberries (plus extra for garnish if desired)
• Grapefruit soda to top — approx. 60–80ml
• 1 large handful of ice
• Lemon peel to garnish

STEP-BY-STEP RECIPE

1. Add the Sabatini 0.0, lemon juice, simple syrup and fresh raspberries to a cocktail shaker.

2. Shake hard for 15–20 seconds — this muddles the raspberries and chills the drink simultaneously.

3. Fine-strain the mixture into a rocks glass or coupe glass filled with fresh ice, leaving the raspberry seeds and pulp behind in the shaker.

4. Top gently with grapefruit soda.

5. Express a strip of lemon peel over the glass, run it around the rim, and use as garnish.

6. Serve immediately.
